Pecan Pie Muffins: The Perfect Breakfast
Pecan pie and muffins - what more could you ask for in a breakfast? This delicious muffin recipe is the perfect kid-friendly breakfast for back to school mornings or to add to your weekend brunch spread. Check out the recipe:
INGREDIENTS
- 1 cup packed light brown sugar or another 1:1 substitute 
- ½ cup all-purpose flour 
- 2 cups chopped pecans 
- 2/3 cup butter, softened 
- 2 eggs, beaten 
- Cupcake liners, optional 
INSTRUCTIONS
- Preheat oven to 350 degrees F. 
- Grease muffin tin generously or add a cupcake liner for ease and less of a mess. 
- In medium bowl, stir together brown sugar, flour, and chopped pecans. 
- In a separate bowl, beat the softened butter and eggs together. Stir in dry ingredients just until combined. 
- Spoon batter into muffin cups about 2/3 full. 
- Bake for 12-13 minutes for mini muffins or 15-17 minutes for regular size muffins. 
- Serve alongside your favorite Georgia grown jams and butter for the perfect breakfast. Enjoy!
