Pecan Butter Cookies

If you love a classic peanut butter cookie, let us elevate your cookies with Pecan Butter Cookies. The richness and depth of the Pecan Butter brings a new dynamic to a classic. We used Creamy Pecan Butter and Pecan Pieces for an ultimate Pecan Butter cookies, but any Pecan Butter would work well in this recipe.

 

Ingredients

  • 1 ½ cups flour

  • ½ teaspoon salt

  • ½ teaspoon baking soda

  • 1 cup sugar, divided (¼ cup for rolling dough in)

  • 1 stick butter (8 tablespoons), room temperature

  • 1 egg, large

  • 1 cup Pecan Butter (your choice)

  • 1 teaspoon vanilla extract

  • ½ cup Pecan Pieces

Directions

  • Preheat oven to 375℉. Line two baking sheets with parchment paper and set aside.

  • In a medium bowl, combine flour, salt and baking soda. Set aside.

  • In another bowl, use a hand mixer to combine the sugar and butter until fluffy, about 3 minutes.

  • Add in the egg, mix on low until combined. Add in the pecan butter and vanilla, mix until just combined.

  • Slowly add the flour mixture. Mix until combine and no flour clumps remain.

  • With a spatula, stir in pecan pieces.

  • Once mixed thoroughly, scoop and roll the dough (about 1 Tablespoon) in to 1” balls. Roll in sugar and place on prepared baking sheet.

  • Bake for 8-10 minutes or until golden brown. Allow to cool 2 minutes, then impress with a fork. Cool completely on a cooling rack.
