The Perfect Dessert for Your Valentine: Pecan Butter Cookie Skillet

A Cookie Skillet for two sounds like the perfect way to enjoy Valentine’s Day. This Pecan Butter Cookie Skillet is delicious by itself or topped with ice cream, fruit, or whipped cream. Find this recipe in the latest episode of Good Food with Goodson Pecans.

Ingredients: 

  • 1.5 cups oat flour (or any flour of your choosing)

  • 1/2 cup of Goodson Pecans creamy pecan butter

  • 1/3 cup maple syrup (can add an extra 1/3 cup for extra sweetness)

  • 1 egg

  • ½ tsp vanilla

  • ¼ tsp sea salt

  • ¼ baking soda

  • 1 chocolate bar, roughly chopped (makes approximately ½-3/4 cup)

Instructions: 

  1. Preheat oven to 350 degrees

  2. In a medium bowl, whisk the egg until evenly blended

  3. Add in maple syrup, pecan butter, vanilla, baking soda, and salt.

  4. Fold in the flour until well combined.

  5. Taking three quarters of the chopped chocolate bar, fold into the cookie batter.

  6. In a lightly greased cast iron skillet, pour the batter and spread evenly. Place the remaining chocolate pieces on top.

  7. Bake for about 20-25 minutes, check halfway. For a more fudgy skillet, bake for 20-22 minutes. For a more cake-like skillet, bake for 23-25 minutes.

  8. Can be served immediately in the skillet topped with ice cream or can be cooled and cut into squares.
