Simple Chicken Salad with Fancy Shelled Pecan Halves

Chicken salad is a quick, healthy and delicious entree. It is versatile in how you can serve it; on a bed of lettuce, in a pita pocket, as a sandwich, by itself, with crackers, the possibilities are endless. This 7-ingredient recipe will only take you a short time to whip up and it’s sure to become a family favorite. With a lean source of protein, fruit (grapes), a vegetable (celery) and a healthy fat (pecans) it will leave you satisfied and full for a long period of time.

Directions

  • Cook chicken according to your liking. Let cool and then chop or shred.

  • While the chicken is cooking, chop the grapes, celery and pecan halves.

  • In a large bowl, combine the chicken, grapes, celery, pecan halves and mayonnaise. Mix until well combined.

  • Season with salt and pepper to taste.

  • Serve alongside a greens, crackers or in a pita pocket for a quick lunch.
