Baked Oats with Creamy Honey Pecan Butter

School is in full swing, which means easy and nutritious breakfast ideas are needed. Make these baked oats ahead for a quick breakfast out of the door. They can be customized to each individual eating them, which is very helpful when you have children with different taste preferences. Top with your choice of fruit, chia or flax seeds, and unsweetened coconut flakes.

Ingredients

  • 3 cups quick oats

  • 2 teaspoon baking powder

  • 1 teaspoon salt

  • 2 teaspoon ground cinnamon

  • ⅓ cup white sugar

  • ⅓ cup brown sugar, packed

  • 2 eggs, large, lightly beaten

  • 1 cup milk or almond milk

  • ½ cup butter, melted

  • 2 teaspoons vanilla extract

  • 1 cup Fancy Shelled Pecans, chopped

  • 4 oz or 10 oz Creamy with Honey Pecan Butter

  • Preheat oven to 350℉ (177℃).

  • Grease and 9x9 pan, set aside.

  • Combine the oats, baking powder, salt, cinnamon, and sugars in a large bowl. Set aside.

  • In a medium bowl, combine eggs, butter, vanilla and milk; mix well.

  • Pour wet ingredients into the oat mixture and stir until well combined.

  • Add pecans and stir until incorporated.

  • Bake for 40-45 minutes or until golden brown. Let cool for 10-15 minutes.

  • Serve warm, topped with almond milk, chia seeds, pecan butter and bananas as pictured or create your own combination.
