Healthy Lunches with Pecans
School is almost back in full swing and we know that being back on a schedule can be nice but meal planning can be hard. So we’ve got four easy, healthy and delicious lunches with pecans for you. Pecans have great antioxidant content, are healthy fats and have been proven to help with weight management in satiety and fullness.
1. Pecan Butter and Jelly Sandwich — a childhood favorite that is sure to bring comfort. It’s also great for anyone who has a peanut allergy but still wants to be nostalgic. It tastes different than a traditional PB&J but still delicious. Serve with your favorite vegetables, like carrots, bell peppers, cucumbers or celery sticks.
2. Chicken Salad with Toasted Pecan Pieces —
1 Rotisserie Chicken
2 Cups of grapes (red or green)
3 stalks of celery
¼ -½ Cup Pecan pieces (depending on how much you want)
⅔ C mayonnaise
Salt and pepper for seasoning
Preheat oven to 350℉
